While in the quest menu, just use the hotkey to minimize all. From there, open whichever quest menu you would like to view, keeping all other categories minimized. This will display the text as it is intended. It's very easy using the Xbox controller (you'd be crazy to not use a controller for this game anyway) as the "X" button is the hotkey
